Another Coscto Run

It was time for another Coscto run, so I braved the wind and rain (not to mention missing game 3 of the world series (but Tivo saved the game)) and went to Coscto. Here's what I got:
Pre-made Greek Salad
20 lb sack of Potatoes (probably a little excessive)
5 lb sack of apples
pre-made chicken parmagiana
4 lb container of grapes
3 lb bag of bananas
3 pack of classico red sauce
pre-packaged turkey meat
2 pack of Milton's bread
4 pack of english muffins
2 pack of fresh ravioli

My plans for cooking this week include:
Cooking the Chicken Parmigiana tonight and having it with a little pasta
Eating half of the Greek Salad for lunch today
Having left over chicken parmagiana for lunch tomorrow
cooking the ravioli and putting some of the classico red sauce on it tomorrow night or Friday night
making turkey sandwiches when other lunch foods run out
making wasabi mashed potatoes and garlic mashed potatoes this weekend

What To Do With Left Over Halibut?

The question is What do I do with left over halibut? The simple answer is to eat it! I ran into this problem this past weekend. I had some left over blackened cajun halibut that I needed to do something with soon or else it would go bad, and we can't have that. So I decided to combine it with some alfredo sauce and have it over some pasta. The ingredients were:
regular alfredo sauce (out of a jar, I'm afriad, but that's ok in this case)
the halibut
some Louisiana seasoning
oregano
fresh black pepper
pinch of salt
heat
It turned out pretty good. It was very similar to the Cajun Chicken Linguine dish served at Ray's Waterfront in Seward, Alaska.

More Halibut

Yesterday I cooked blackened halibut with cous cous and broiled asparagus. I think the halibut could have turned out a bit better. Now I need to find what else I can cook this week.

Menu Aftermath for 10/11 - 10/15

On Tuesday I cooked Halibut (marinated in garlic, yoshida's gourmet sauce, oregano, and other spices), asparagus, and cous cous. It turned out pretty good. I also cooked the chicken pot pie from Costco on Wednesday (10/13) and that also turned out pretty good. This weekend we might cook something, but I doubt it. I'll have to think about ideas of things to cook next week.

Menu For The Week (10/4 - 10/8)

This is going to be a 4 day work week due to the backpacking trip scheduled for this weekend to Desolation Wilderness. As a result of our shopping and cooking here's what's on the menu.
1. Lots of turkey and avacado sandwiches due to a large amount of turkey and avacado that we have to eat before we go out of town.
2. Leftover steak that was cooked this past weekend.
3. At least one halibut filet to keep working on the halibut.

That pretty much summarizes lunches and dinners for the coming week.
